This course is made in collaboration with OffLab.

Enzo Formisano is the Master of Ceramic who runs Officina Ceramic School.

Since 2012, the Regione Toscana has recognized Enzo as a Master/Artisan Craftsman in Florence. He was awarded this honour because he follows the traditional guidelines and he collaborates with local institutions. Enzo Formisano considers as best compliment he has ever received the one received by an Israeli student: “this is not a place for painting, this is a place for healing”. This is what made Chef Marcella Ansaldo to take the decision to start a collaboration with OffLab.

Program

  • Three morning of Pottery Painting and Decoration at the OFFICINA LAB with three traditional designs. The lesson will also include Pottery Art History and possibility of personalized decoration.
  • Three afternoons of cooking classes with the followings Renaissance recipes.

Cooking Lesson 1

  • Crepe of Caterina De’ Medici
  • Limonia (Chicken Renaissance dish)
  • Pears poached in wine with zabaione

Cooking Lesson 2

  • Pici alla Buttera
  • Chicken with spring onions and prunes
  • Pear and apple cake with rose syrup

Cooking Lesson 3

  • Soup of chickpeas and cabbage
  • Wild boar with cocoa sauce
  • Cialdone di Lorenzo il Magnifico
