3 month Cooking Course

OVERVIEW ON ITALIAN CUISINE

This program lasts twelve weeks, with two sessions every year.

The total lasting is 81 days; no permit of staying is needed.

It includes three different courses.
Every class last about 3 hours, for a total of 36 hours each course
and 108 hours the full program.

The participants will receive the three booklets of the courses and the apron.

MATTERS AND TITLES OF THE COURSES

Italian Cuisine Through Time and Space 

12 lessons

This course is about the evolution of techniques and instruments.

We will examine the introduction of foreign foods into Italian Cuisine and students will experience how Italian recipes can be reproduced far for their place of birth.

Seasonality of the Italian Regions

12 lessons

This course spaces through the Italian territory month after month.

Emphasis is put on the importance of “fresh, seasonal, local”, on  nutrition and health. There are two different courses, for Winter-Spring and Summer-Fall.

Tuscany and Its Dishes

12 lessons

The course analyses the different micro-cosmos of Tuscany: mountains, sea coast, the rolling hills, the ancient towns.

Tuscany is the heart of Italy and the birth place of Italian language. Within this region there are many different culinary traditions.
